Vegetable Stew

Ingredients
  

  • 1 sweet potato
  • 1 white potato
  • 1 small rutabaga
  • 2 onions
  • 3 parsnips
  • 4 regular carrots
  • 6 cups vegetable broth
  • kosher salt and black pepper to taste

Instructions
 

  • Peel and dice all the vegetables.
  • Place all vegetables in stock pot.
  • Bring to boil and then reduce heat to low and simmer until vegetables are tender.

Ingredients
  

  • 1 pound lean ground beef Turkey, Chicken or Pork can also be used
  • 1/4 cup chopped onion
  • 1/4 cup chopped green bell pepper
  • 1/2 teaspoon garlic powder
  • 1 teaspoon prepared yellow mustard
  • 3/4 cup ketchup
  • 3 teaspoons brown sugar
  • salt and ground pepper to taste

Instructions
 

  • In skillet over medium heat, brown ground beef, onions and peppers.
  • Drain off excess liquid.
  • Stir in remaining ingredients and simmer for 15 to 20 minutes, stirring frequently.

Zucchini And More Stew

Ingredients
  

  • 2 Tbsp cooking oil
  • 2 medium onions diced
  • 4 large tomatoes diced
  • 1 tsp salt
  • 1/2 lb green beans trimmed and cut small
  • 5 cups water or broth
  • 6 small young zucchini, chopped
  • 4 yellow squash chopped
  • 1 Tbsp mixed dried herbs or 1 tsp mixed fresh Dill
  • 1 Tbsp mixed dried herbs or 1 tsp mixed fresh Rosemary
  • 1 Tbsp mixed dried herbs or 1 tsp mixed fresh Basil

Instructions
 

  • Put oil in large stock pot over medium heat, cook onion until tender.
  • Add the water and tomatoes, turn heat down to low and simmer for 10 minutes, stirring frequently.
  • Add remaining ingredients, stir, cover pot and simmer gently for 30 minutes or until all the vegetables are tender.
  • Season with salt and pepper.

Beef Hominy Stew

Beef Hominy Stew

Ingredients
  

  • 2 lbs beef stew meat
  • 1 Tbsp cooking oil
  • 1 large sweet onion chopped
  • 1 garlic clove crushed
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/4 cup chopped fresh cilantro
  • 6 cups water
  • 1 - 14.5 oz can diced tomatoes
  • 2 Tbsp tomato paste
  • 1 - 28 oz can hominy

Instructions
 

  • Get out a large pot, add the oil, and when hot, add the beef and cook quickly just until beef browns well.
  • Add the onion, garlic, salt and pepper; stir and cook for 30 seconds, then add cilantro and water; stir.
  • Turn the heat down to low, cover the pot, and allow to simmer very slowly for about 15 minutes, or until the meat is very tender.
  • Add the tomatoes and tomato paste, cover the pot again, and allow to simmer very slowly for about 15 minutes.
  • Add the hominy, cover pot loosely, and allow to simmer slowly for another 15 minutes, stirring often.

Freezer Shrimp Stew

I would suggest always using fresh Shrimp.  If you live near the coast, try one of those little seafood stands near where the fishing boats come in.  They usually have the fresh good stuff.

Ingredients
  

  • 1/2 Cup olive oil
  • 1 clove garlic chopped fine
  • 1 medium onion chopped
  • 2 green onions chopped
  • 1 green pepper chopped
  • 1 15 oz can diced tomatoes
  • 1 6 oz can tomato paste
  • 1 3/4 Cup burgundy
  • 1 Tbsp parsley
  • 2 tsp oregano
  • 1/2 tsp basil
  • 2 tsp salt
  • 1/4 tsp pepper
  • 3/4 Cup water
  • 1 1/2 lb halibut steaks cut into 1 in pieces
  • 1/2 raw shrimp shelled and de-veined
  • 2 6 oz packages frozen crabmeat, thawed
  • Aluminum foil

Instructions
 

  • Place oil in a large soup pan over medium heat.
  • When the oil is hot add the garlic, both types of onion and green pepper.
  • Cook until tender, about 10 minutes.
  • Add the tomatoes and the tomato paste to the cooked vegetables.
  • Slowly add the burgundy being sure to stir well
  • Mix in the parsley, oregano, basil salt and pepper.
  • Once all is mixed together well pour in the water.
  • Bring to a rapid boil.
  • Reduce heat to low.
  • Simmer uncovered 1- minutes.
  • Add halibut, shrimp and crabmeat.
  • Cover and simmer 15 minutes.
  • Uncover and cook an additional 15 minutes.
  • Remove from heat and cool to room temperature.
  • Line a large bowl with foil being sure the foil extends at least 6 in over the side of the bowl.
  • Pour the cooled stew into the bowl.
  • Fold the aluminum foil over the top of the stew being sure to secure tightly.
  • Freeze until firm
  • Remove from the bowl.
  • Wrap again tightly with foil.
  • Freeze for up to 6 months.
  • To cook, remove foil.
  • Place in a large soup pan.
  • Add a small amount about 1-2 Cup water.
  • Cover and cook on low until heated through.

Ingredients
  

  • 1 1/2 pounds stew beef -- trimmed
  • 1 tablespoon cooking oil
  • 8 fresh tomatoes -- peeled and cut up up to 12
  • 2 cups tomato juice or water
  • 2 medium onions -- chopped
  • 1 clove garlic -- minced
  • 1/2 teaspoon pepper
  • 2 teaspoons salt -- optional
  • 4 medium potatoes -- peeled up to 6 quartered
  • 3 carrots -- sliced up to 5
  • 2 cups corn -- frozen
  • 2 cups fresh green beans
  • 2 cups peas -- frozen
  • 2 celery stalks -- up to 3
  • 1 cup summer squash -- sliced
  • 1/4 cup fresh parsley -- snipped
  • 1 teaspoon sugar

Instructions
 

  • Put oil in the dutch oven and brown meat over medium heat.
  • Stir in tomatoes, tomato juice, onions, garlic, salt, and pepper.
  • Bring to a rolling boil.
  • Reduce heat and simmer for one hour.
  • Fold in carrots, corn, potatoes, green beans, celery, and peas.
  • Cover tightly and let simmer for 30 minutes.
  • Add in squash and simmer for an additional 10 to 15 minutes, until everything is tender.
  • Add in sugar and parsley.
